Daniel's Journey

Chef Daniel Garwood is an Australian-born chef whose cuisine is defined by seasonality, sustainability, and a deep respect for ingredients. Raised in Launceston, Tasmania, his passion for cooking began with foraging, harvesting local produce, and cooking over open fire. These early experiences continue to shape his culinary philosophy.

His career has taken him across Australia, Europe, Asia, and the United States, where he has refined his craft in acclaimed restaurants throughout Sweden, Italy, Belgium, Denmark, South Korea, and beyond. These global experiences have inspired a distinctive culinary style that blends his Australian heritage with techniques, traditions, and flavors from around the world.

Daniel gained international recognition after winning the U.S. Regional Final of the S.Pellegrino Young Chef Academy Competition in 2022. His winning dish earned acclaim for its technical precision, creativity, and ingredient-driven storytelling.

Now based in Greenwich Village, NYC, Daniel creates contemporary dining experiences centered on live-fire cooking, fermentation, and hyper-seasonal ingredients. His cuisine reflects both the rugged landscapes of Tasmania and the diverse culinary traditions he has encountered throughout his career.

In 2025, Daniel was named a semifinalist for the James Beard Awards, further establishing him as one of the most exciting emerging voices in modern gastronomy.

Beyond the kitchen, Daniel is a passionate advocate for mental health in the hospitality industry. He is committed to fostering healthier, more sustainable kitchen cultures while continuing to push the boundaries of contemporary cuisine.
